Chicken Tostadas

Chicken tostadas with crunchy shells, chicken and veggies are perfect for a fast dinner.

Tostadas are cooked tortillas that are cooked again to make them crispy. Chicken tostadas is a dish prepared with crunchy tostadas topped with chicken, lettuce, beans, cheese, salsa and other ingredients.

Chicken Tostadas

Ingredients:

  • 8 tostadas (crispy whole corn tortillas)
  • 1 pound chicken breast
  • 1 cup refried beans
  • 1 cup iceberg lettuce, thinly sliced
  • 1 medium white onion, thinly sliced
  • 1/2 cup Mexican cream or sour cream
  • 1 cup queso ranchero, a type of Mexican cheese
  • 2 cups of salsa, salsa ranchera or salsa verde or any other salsa
  • ¼ cup chopped cilantro
  • kosher salt and black pepper
  • juice of one lime
  • 1 avocado, chopped

Directions:

To marinate chicken, mix it with lime juice, oil, and chopped cilantro. Add salt and pepper to this and cover with plastic wrap. Let it stand in the fridge for around 30 minutes.

Cook chicken in a frying pan until it is cooked thoroughly. Slice it once it cools.

Heat beans in the microwave or on the stove.

Place the crispy tortillas on work surface and spread warmed beans on them. Top the tortillas with shredded cheese.

Transfer tortillas to a baking sheet and bake until the cheese is lightly melted and browned. This won’t take more than 30 seconds.

Place tortillas on plates and mound them with chicken. Top with chopped lettuce and then with avocado, salsa and sour cream. Sprinkle chopped scallion, tomatoes and cilantro and serve Chicken Tostadas with lime wedges.

Alternatively, shredded cooked beef can be used to make beef tostadas.
